Kerala Style Red Coconut Chutney

Red coconut chutney is a bright red coloured Kerala style coconut chutney for idli, dosa and uttapam. This is quick to prepare chutney (if you have grated coconut already). The red chilies add some heat and smoky flavour to the chutney. Madras onions also add their flavour and taste to the chutney. Usually we prefer coconut chutney with roasted chana dal and coconut, but at times I make it this way too. When I have green chilies, I add green chilies. In the absence of green chilies, I add red chilies. Depending on the kind of red chilies added, the taste may vary in pungency and heat element. So you can add the red chilies accordingly. This Kerala style chutney makes for a good accompaniment with the South Indian tiffin snacks like rava idli or rava dosa or medu vada or mysore bonda etc. Watch the step by step video of this recipe. Spinach, Tomato & Cottage Cheese Salad

Don’t you love it when you pin something, and click on the photo, expecting to be taken to the link that will provide the recipe, then- nothing? Dud. A while back, I pinned a photo of a salad that I thought looked perfect for a summer salad. When I tried to see the link to the photo, it was a dead end. No recipe link. Oh well. I looked at the photo again, and discovered this: You don’t need to be Martha to figure this one out. All you need are: spinach, tomato, cottage cheese and about 5 minutes. This salad can be made year 'round, but is best in the summer months for a casual brunch. That said, it is also best made with tomatoes that are NOT juicy. I like to make it with cherry or grape tomatoes (simple to slice them in half, or leave them whole in the salad) so there is not an issue with the tomatoes giving off too much water and making the salad runny. Broccoli, Arugula & Tofu Salad

A quick healthy salad thrown in together for lunch on a working day! Trying to get in a good dose of fibre from fresh greens has been my focus these days. Ingredients: 1 cup fresh vegetables - broccoli, colored bell peppers, green beans, cut in cubes 1/2 cup mushrooms, 1 cup fresh arugula leaves 100 grams tofu, Dressing: 1-2 tbsp mustard sauce 1 tsp honey Method:  1. Stir fry all the mixed vegetables and set aside 2. Stir fry the mushrooms and set aside. 3. Stir fry the tofu and set aside. 4. Break the arugula leaves into half. 5. In a bowl, arrange arugula leaves, stir fried vegetables and tofu. 6. Pour the mustard sauce and honey over the salad and mix well. 7. Serve lukewarm. Enjoy!!!

Pink Passion Smoothie

During the strawberry season, I stocked up on a lot of strawberries from the whole sale market. Getting them at a cheaper cost makes it affordable to buy in bulk and store them for future use. You can store them either as whole or make a compote which can be used on pancakes or toasts. Compote can be frozen as well.  Ingredients: 1 cup chilled milk 1 cup frozen strawberries 1 frozen banana 1/2 cup pomogranate 2-3 thin slices of beetroot 2 dates, pitted   Method: Boil the beetroot slices in 1 cup of water. Strain and set it aside to cool. Soak the dates in 1/4 cup of boiled water to soften them for 10 mins. In a blender add milk and rest of the ingredients. Tropi-Kale Smoothie

I have been loving my green smoothies. It's one of the most nourishing and refreshing drinks. It also cleanses your system. I prefer to have this along with my breakfast. But it can be stored in the fridge and had even as an evening snack. Ingredients: 1/2 cup spinach 1/2 cup kale 1 cup coconut water or plain water 1 frozen banana 1/2 cup frozen pineapple Method: Blend spinach, kale & coconut water together until smooth. Banana On Toast

Great pre workout or post workout snack with a combination of carbohydrates, protein & good fats, this is a very quick, easy and effortless snack when you want something sweet, satisfying and FAST! Switch the nut butters based on your preference and availability. Experiment with different fruits and toppings of your choice. Ingredients: 3-4 toast/rusk, 1 large banana, 3-4 tsp almond butter, 1 tsp chia seeds, 1 tsp honey, 1 tsp pumpkin seeds, 1 tsp pomegranates (optional) Method: 1.
