Peanut Butter Chocolate Cookies

These eggless peanut butter chocolate cookies are the best thing to happen in my kitchen for a while now. They’re so delicious and easy to bake. The cookie dough comes together in no time. The recipe calls for dark cocoa powder and for this I have used Indian Natives Absolute Dark Cocoa Powder . This Cocoa is grown in the farmlands located in the river banks of Anaimalai, Tamil Nadu. The farm is 100% pesticide free and organic and managed in a sustainable way. These cookies are chewy, easy to make, delicious, chocolaty, crisp on the edges, and most certainly addictive! The only patience-testing part of making these eggless peanut butter cookies is the resting period. I rested my dough in the for 30 mins. I have to upfront declare that I'm not an expert in bread baking. I have had multiple failed attempts in bread baking until I found this easy easy no knead bread recipe off the internet. The original recipe called for double the quantity of ingredients and some other things. However, I tweaked it a bit to our taste and liking with every attempt and eventually I have stuck to this tweaked recipe. It requires no kneading and uses no special ingredients, equipment or techniques. It takes very little effort — only time. You will need 24 hours to create the bread, but much of this is unattended waiting, a slow fermentation of the dough that results in a perfect loaf. This is just the simplest kind of bread you can make. You basically throw everything into a bowl and mix it up, then sit around, let the yeast do its work, and bake it. So, today a month has passed since the New Year was born. Wow! Time passes by so soon. January was a super hectic month and I was zipping in and out of town. This banana bread comes from my friend who years ago borrowed this recipe from her friend's mother. They being Catholics, had this recipe passed down from their grandmother. Passed down from generations, this recipe is truly delicious and is a recipe for keeps. That’s the wonderful thing about sharing recipes, the more good recipes we share, the better we all get to eat! Corn & Tomato Tart - An Entry To The Freedom Tree Baking Contest

IFBM organizers are making us go crazy by luring us with beautiful gifts to be won. And this time its Freedom Tree bakewares to be won. Check out their website. Frangipane is a filling made from or flavored with almonds. This filling can be used in a variety of ways including cakes, tarts and other assorted pastries. Originally designated as a custard tart flavored by almonds or pistachios it came later to designate a filling that could be used in a variety of confections and baked goods. Frangipane is one of France's many traditional foods associated with Christmas celebration. These days it is normally made of butter, sugar, eggs, and ground almonds. Mushroom Cheddar Tart - Avid Baker's Challenge

I came across the Avid Baker's Challenge a few days back and was waiting for the month to begin so that I could participate in the challenge. For the month of March, Hanna chose Mushroom Cheddar Tart as the recipe.  Mushroom and Cheese in a tart! Can there be a better combination than this? No. The addition of cheese into the dough and into the tart mixture gives it such a nice taste. As per the original recipe, Parmesan cheese needed to be added to the dough. I didn't have Parmesan, so I added cheddar. It gave a very beautiful balance and sharp taste to the tart base. The original recipe used Hi-maize flour, which I didn't have. So I substituted it with the all purpose flour itself. Overall, it tasted so divine. The butter, cheese and ofcourse the mushrooms and red pepper, made an ideal combination together. Chocolate Truffle Cake & A Beautiful Gift From A Friend

A few weeks back, my very close friend visited me from Chennai. We were colleagues earlier and our friendship has just grown over the years. She and me share our date of birth. I don't know if it is to do with the DOB, but we think alike. We do have our share of disagreements, but give and take, we share a very beautiful friendship. So a few years back, she asked me what gift I would want, and I told her I wanted a nice cake stand. Over the years, we moved to different cities but she had the thought in her mind. She kept telling me at many instances that she is still waiting to gift me a cake stand. So this time, while she visited, she got me this beautiful cake stand. I just loved it!!!
