Chocolate Brownie

Yesterday was hubby dear's birthday. I had kept this Brownie recipe aside from a long time..which I decided to make on his birthday. Well the day began with my son complaining of severe ear pain and fever. Everybody was terribly upset. Nothing would could make my son stop crying... It was hurting him so badly..that we all got really worried. We frantically tried to reach a pediatrician but in no vain..yesterday being Sunday!!! Finally we took him to Manipal Hospital where the doctor detected it as an ear infection. A dose of medicine in the hospital and within minutes my son sprung back to his original self. We were all relieved and that's when we realized we should wish "Daddy" Happy Birthday!!! We reached home at around 4 pm and I was in no mood to bake the brownie. But I thought since half a day was already lost, lets make the other half as delightful as possible. I got into action..and out came from the oven beautiful chocolate brownie...:) Recipe source...

Twisted Tutti Fruti Cake

My SIL and BIL left today after a week long stay with us. We had an awesome time..and most of it was spent in the kitchen..my favorite place. I loved cooking for them..and they enjoyed it too!!! However, amidst all the chaos, I wanted to bake something for them but could not find time. Today early morning I decided to make something for them as a take-away. I had some tutti fruit’s in the fridge and decided to bake Tutti Fruti Cake..with a twist.. I have baked this cake quite a few times before for guests coming over for tea.. and I love the wonderful contrast of the colorful tutti fruti’s over the pale yellow colored base..its such a wonderful sight!!! Today I decided to experiment slightly by adding some cocoa powder…just to slightly enhance the base color… Very skeptical about the taste and color, I was anxious to try out the cake before I could pack it for them..and I must say, I was pleasantly surprised…it was delicious..a beautiful color to the cake and an even beautiful...

Recycled Idlis - Idli Upma

Idlis are a favourite in my house and hence it is very rare that they are leftover...but whenever I prepare idli's I usually make some extras...So while I was deciding what to make for breakfast in the morning today, I was thrilled when I remembered there were 5-6 idlis left over from yesterday..and instantly I decided to make a delicious and spicy upma from them. This is such a simple food yet so satisfying..This is great for breakfast or an evening tiffin...thats why I call it Recycled Idlis..:) Ingredients: 6 left over idlis , crumbled into small pieces 1 tsp mustard seeds 1 tsp urad dal 5-6 curry leaves 2 tbsp oil 2-3 tsp idli karam podi Salt as per taste Method: 1.) Heat oil in a non stick pan. Add urad dal and wait until it turns golden brown. Add mustard seeds and allow them to splutter. Add the curry leaves. 2.) Add the crumbled idli and mix well. Mullu Tengoil

Ingredients: 1 cup rice flour ½ cup chickpea flour 1 tsp cumin seeds 1-1/2 tbsp white or cooking butter , softened 3 tsp salt , soaked in 3 tbsp of water ½ tsp whole asafoetida , soaked in 2 tbsp of water for 2 hrs Oil for deep frying You would also need a "muruku press" to make them. I have the one which has been traditionally used, but these days you have lot of easy and automated ones. You can see how my muruku press looks. There are different nozzles for different kinds of delicacies. For this particular tengoil preparation, I've used the one which is a 3-stared nozzle. Method: 1.) In a big vessel, sift together rice and chickpea flour. Add cumin seeds, asafoetida water, little salt water, and butter. Keep adjusting the salt as per taste by adding very little salt water at a time. Mix thoroughly by adding little water at a time until a thick dough is formed. 2.) Fish Pulusu - Andhra Style

Fish pulusu is a common and famous Andhra cuisine. Visit any authentic Andhra restaurant and you've got to find this in their menu.. Once in one of our visits to "Abhiruchi" which is famous for their authentic "Andhra Meals" we ordered Fish Pulusu. I wanted to learn the dish and on very special request, the chef came out and told me how to make it.. Here's the recipe...i'm sure you'd love it.. Ingredients: 500 gms fish , (any fish without bones) cut into medium size pieces. 3 medium sized onions , chopped. 3 tomatoes , chopped 3 green chillies , slit 2 spoons tamarind pulp or juice of 1 lime sized tamarind 2 spoons grated coconut (optional) 1-1/2 teaspoon red chilly powder ¾ teaspoon turmeric powder 3 whole green cardamoms 1 teaspoon cumin seeds Salt to taste 2 tablespoon cooking oil 6-7 curry leaves Fresh coriander leaves for garnishing 2 teaspoon turmeric powder to wash the fish (optional).
